🥔 Irish Nachos

Ingredients
  

  • 2 lbs potatoes russet or Yukon Gold, thinly sliced
  • 3 tbsp olive oil
  • Salt & black pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1/2 cup green onions sliced
  • 1/2 cup sour cream
  • Optional toppings: jalapeños diced tomatoes, chopped parsley

Method
 

Preheat Oven:
  1. Heat to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare Potatoes:
  1. Thinly slice potatoes (mandoline works best). Toss with olive oil, salt, and pepper.
Bake Potatoes:
  1. Spread in a single layer on the baking sheet. Bake 20–25 minutes until golden and crispy, flipping halfway through.
Add Toppings:
  1. Remove potatoes from oven. Sprinkle shredded cheese and crumbled bacon over the top. Return to oven 5–7 minutes until cheese is melted.
Serve:
  1. Top with green onions and dollops of sour cream. Add optional toppings if desired. Serve immediately.

Notes

Crispier Chips: Soak potato slices in cold water 15–20 minutes, then pat dry before baking.
Cheese Options: Mix cheddar with Monterey Jack or mozzarella for extra melty goodness.
Make Ahead: Bake potato slices in advance; add toppings and melt cheese just before serving.
Extra Flavor: Sprinkle with smoked paprika or garlic powder for a flavor boost.
