🥓🥞 Maple Bacon Pancake Bites

Ingredients
  

  • 1½ cups pancake mix
  • 1 cup milk or as directed on pancake mix
  • 1 large egg
  • 1 tsp vanilla extract optional
  • 6 slices bacon cooked crispy and crumbled
  • ½ cup shredded cheddar cheese optional but delicious
  • ¼ cup maple syrup plus extra for serving
  • Nonstick cooking spray or butter

Method
 

Preheat Oven:
  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter.
Make the Batter:
  1. In a mixing bowl, whisk pancake mix, milk, egg, and vanilla until just combined. Do not overmix.
Add Bacon & Cheese:
  1. Fold in crumbled bacon and shredded cheddar cheese if using.
Fill the Muffin Tin:
  1. Spoon batter into prepared mini muffin cups, filling each about ¾ full.
Bake:
  1. Bake for 12–15 minutes, until puffed and lightly golden.
  2. Finish with Maple:
  3. Remove from oven and immediately drizzle each bite with maple syrup.
Serve:
  1. Let cool slightly and serve warm with extra maple syrup for dipping.

Notes

Extra Crispy Bacon: Bake bacon in the oven for best texture before crumbling.
Sweet or Savory: Skip cheese for a sweeter version or add a pinch of black pepper for contrast.
Make Ahead: Reheat bites in the oven at 325°F (165°C) for 5 minutes.
Freezer Friendly: Freeze fully baked bites up to 2 months; reheat straight from frozen.
