Method
Preheat Oven:
- Preheat oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter.
Make the Batter:
- In a mixing bowl, whisk pancake mix, milk, egg, and vanilla until just combined. Do not overmix.
Add Bacon & Cheese:
- Fold in crumbled bacon and shredded cheddar cheese if using.
Fill the Muffin Tin:
- Spoon batter into prepared mini muffin cups, filling each about ¾ full.
Bake:
- Bake for 12–15 minutes, until puffed and lightly golden.
- Finish with Maple:
- Remove from oven and immediately drizzle each bite with maple syrup.
Serve:
- Let cool slightly and serve warm with extra maple syrup for dipping.
