- Cook Rice:
- In a medium saucepan, combine rice, milk, sugar, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.
- Simmer Slowly:
- Reduce heat to low and cook uncovered for 25–30 minutes, stirring often, until rice is tender and mixture thickens.
- Add Chocolate:
- Stir in cocoa powder, chocolate chips, and vanilla extract. Mix until melted and fully incorporated.
- Taste & Adjust:
- Add more sugar if desired for sweetness. If pudding is too thick, stir in a splash more milk.
- Serve:
- Spoon into bowls and serve warm, or chill for a cool dessert. Garnish with whipped cream or chocolate shavings if desired.
Notes
Extra Creamy: Stir in 1/2 cup heavy cream at the end for a richer texture.
Make Ahead: Store in the fridge for up to 3 days. It will thicken as it cools, so add a splash of milk before reheating.
