Ingredients
  

  • 1 cup short-grain rice like arborio or pudding rice
  • 4 cups whole milk or 2% for lighter version
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips or chopped dark chocolate
  • 2 tbsp unsweetened cocoa powder
  • Optional toppings: whipped cream shaved chocolate, berries

Method
 

  1. Cook Rice:
  2. In a medium saucepan, combine rice, milk, sugar, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.
  3. Simmer Slowly:
  4. Reduce heat to low and cook uncovered for 25–30 minutes, stirring often, until rice is tender and mixture thickens.
  5. Add Chocolate:
  6. Stir in cocoa powder, chocolate chips, and vanilla extract. Mix until melted and fully incorporated.
  7. Taste & Adjust:
  8. Add more sugar if desired for sweetness. If pudding is too thick, stir in a splash more milk.
  9. Serve:
  10. Spoon into bowls and serve warm, or chill for a cool dessert. Garnish with whipped cream or chocolate shavings if desired.

Notes

Extra Creamy: Stir in 1/2 cup heavy cream at the end for a richer texture.
Make Ahead: Store in the fridge for up to 3 days. It will thicken as it cools, so add a splash of milk before reheating.
Flavor Variations: Add a pinch of cinnamon, espresso powder, or orange zest for a twist.
Vegan Option: Use coconut milk or almond milk and dairy-free chocolate.
