Ingredients
  

  • 2 cups heavy cream chilled
  • 1 14 oz can sweetened condensed milk
  • 1 cup ube halaya purple yam jam; store-bought or homemade
  • 1 tsp ube extract for deeper flavor and color
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

Whip Cream:
  1. In a large bowl, beat heavy cream with a hand or stand mixer until stiff peaks form.
Mix Base:
  1. In a separate bowl, whisk together condensed milk, ube halaya, ube extract, vanilla, and salt until smooth.
Fold Together:
  1. Gently fold the whipped cream into the ube mixture until fully combined. Do not overmix β€” keep it airy.
Freeze:
  1. Transfer mixture into a loaf pan or airtight container. Cover with plastic wrap (press against surface to prevent ice crystals). Freeze at least 6 hours or overnight.
Serve:
  1. Scoop into bowls or cones and enjoy the creamy, vibrant treat!

Notes

For extra creaminess, add 2 tbsp cream cheese to the condensed milk mixture before folding.
If you can’t find ube halaya, you can make it from frozen grated ube (steamed and sweetened with condensed milk).
Ube extract not only boosts flavor but also gives the ice cream that iconic deep purple hue.
Pairs beautifully with halo-halo, leche flan, or fresh coconut.
