Ingredients
  

  • 12 oz pasta penne, fettuccine, or rotini
  • 1 lb Cajun chicken sausage sliced into ½-inch pieces
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tsp Cajun seasoning plus more to taste
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Method
 

Cook Pasta:
  1. Boil pasta in salted water according to package directions until al dente. Drain and set aside.
Cook Sausage:
  1. In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook 4–5 minutes until browned. Remove and set aside.
Sauté Veggies:
  1. In the same skillet, add onion, bell pepper, and garlic. Cook 3–4 minutes until softened.
Make Sauce:
  1. Stir in heavy cream, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Simmer 3–5 minutes until slightly thickened.
Combine:
  1. Add cooked sausage and pasta to the sauce. Toss to coat evenly. Stir in Parmesan cheese.
Serve:
  1. Garnish with chopped parsley and extra Parmesan if desired. Serve hot.

Notes

Adjust Cajun seasoning to taste — more for extra heat.
Add cherry tomatoes or spinach for a veggie boost.
Use gluten-free or low-carb pasta for dietary preferences.
Leftovers store well in the fridge up to 3 days; reheat gently on the stovetop with a splash of cream or broth.
