Cook Pasta:
- Boil pasta in salted water according to package directions until al dente. Drain and set aside.
Cook Sausage:
- In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook 4–5 minutes until browned. Remove and set aside.
Sauté Veggies:
- In the same skillet, add onion, bell pepper, and garlic. Cook 3–4 minutes until softened.
Make Sauce:
- Stir in heavy cream, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Simmer 3–5 minutes until slightly thickened.
Combine:
- Add cooked sausage and pasta to the sauce. Toss to coat evenly. Stir in Parmesan cheese.
Serve:
- Garnish with chopped parsley and extra Parmesan if desired. Serve hot.
Notes
Adjust Cajun seasoning to taste — more for extra heat.
