- Sauté Aromatics:
- In a medium skillet, heat olive oil over medium heat. Add onion and sauté 2–3 minutes until translucent. Add garlic and cook 30 seconds until fragrant.
- Add Rice:
- Stir in the rice and cook 1–2 minutes to lightly toast it.
- Add Liquids and Seasoning:
- Pour in the diced tomatoes (with juice) and chicken broth. Stir in Italian seasoning, salt, and pepper.
- Cook the Rice:
- Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until rice is tender and liquid is absorbed.
- Finish:
- Fluff rice with a fork. Stir in Parmesan cheese if desired. Garnish with chopped parsley before serving.
Notes
Make it cheesy: Add extra Parmesan or mozzarella for a creamy variation.
Add veggies: Bell peppers, peas, or mushrooms can be sautéed with the onion for extra color and flavor.
Use brown rice: Increase cooking time to about 40–45 minutes and add extra ¼ cup broth.
Meal prep: Keeps well in the fridge for up to 4 days — reheat with a splash of broth or water to keep it fluffy.
