Preheat Oven:
- Preheat oven to 425°F (220°C).
Prepare the Chicken:
- Pat the chicken dry with paper towels. Place in a roasting pan.
Season:

Stuff the Cavity:
- Place lemon halves and onion quarters inside the chicken cavity.
Roast:
- Roast chicken for 1 hour 10–15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and juices run clear.
Rest & Serve:
- Remove chicken from oven and let rest 10–15 minutes before carving. Garnish with fresh herbs if desired.
