Ingredients
  

  • 1 whole chicken about 4–5 lbs, giblets removed
  • 3 tbsp olive oil or melted butter
  • 6 cloves garlic minced
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 lemon halved
  • 1 onion quartered
  • Optional: fresh herbs rosemary, thyme, parsley for garnish

Method
 

Preheat Oven:
  1. Preheat oven to 425°F (220°C).
Prepare the Chicken:
  1. Pat the chicken dry with paper towels. Place in a roasting pan.
Season:
  1. In a small bowl, mix olive oil, garlic, salt, pepper, paprika, thyme, rosemary, and oregano. Rub the mixture all over the chicken, including under the skin for extra flavor.
Stuff the Cavity:
  1. Place lemon halves and onion quarters inside the chicken cavity.
Roast:
  1. Roast chicken for 1 hour 10–15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and juices run clear.
Rest & Serve:
  1. Remove chicken from oven and let rest 10–15 minutes before carving. Garnish with fresh herbs if desired.

Notes

Crispy Skin: Pat the chicken dry and rub with olive oil for the crispiest skin.
Flavor Boost: Add a few garlic cloves and fresh herbs under the skin before roasting.
Make Ahead: You can season the chicken and refrigerate for a few hours before roasting to deepen the flavor.
Serving Suggestions: Serve with roasted vegetables, mashed potatoes, or a simple green salad.
Leftovers: Use leftover chicken for sandwiches, soups, or salads.
