Ingredients

  • 4 boneless skinless chicken breasts
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 medium onion thinly sliced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 tbsp cornstarch optional, for thicker sauce
  • 1 tbsp fresh parsley chopped (optional for garnish)

Method

  1. Season chicken with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden (about 5–6 minutes per side). Remove and set aside.
  3. Add onions to the skillet. Sauté until soft and caramelized (about 8 minutes).
  4. Pour in broth and stir up any browned bits. Let simmer 2–3 minutes.
  5. Add cream and stir well. Optional: mix cornstarch with a tablespoon of water and add to sauce for extra thickness.
  6. Return chicken to skillet. Cover and simmer for 15 minutes or until chicken is cooked through.
  7. Garnish with parsley and serve hot over mashed potatoes, rice, or egg noodles.
