Method
- Place the chopped onion, celery, carrots, and garlic in the bottom of the crockpot.
- Sprinkle the stuffing mix evenly over the vegetables.
- Add dried thyme, sage, salt, and pepper over the stuffing.
- Pour chicken broth evenly over the stuffing mixture but do not stir.
- Place chicken pieces on top of the stuffing.
- Cover and cook on low for 4–6 hours or on high for 2–3 hours, until chicken is cooked through and tender.
- Optionally, remove the lid in the last 30 minutes to let the chicken skin crisp up (if using skin-on thighs).
- Serve chicken over the savory stuffing and vegetables, garnished with fresh parsley if desired.
Notes
For extra flavor, season chicken with salt, pepper, and a little garlic powder before placing it in the crockpot.
You can swap chicken thighs for breasts or even use a whole cut-up chicken.
Add mushrooms or green beans for more veggies.
Leftovers reheat well and make great lunch bowls!
If you want crispier skin, sear chicken in a hot pan before adding to the crockpot.
