🍗 Crockpot Chicken with Savory Stuffing and Vegetables

Ingredients
  

  • 4 bone-in skin-on chicken thighs (or breasts)
  • 1 box 6 oz seasoned stuffing mix
  • 2 cups chicken broth
  • 1 medium onion chopped
  • 3 celery stalks chopped
  • 2 carrots peeled and sliced
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Method
 

  1. Place the chopped onion, celery, carrots, and garlic in the bottom of the crockpot.
  2. Sprinkle the stuffing mix evenly over the vegetables.
  3. Add dried thyme, sage, salt, and pepper over the stuffing.
  4. Pour chicken broth evenly over the stuffing mixture but do not stir.
  5. Place chicken pieces on top of the stuffing.
  6. Cover and cook on low for 4–6 hours or on high for 2–3 hours, until chicken is cooked through and tender.
  7. Optionally, remove the lid in the last 30 minutes to let the chicken skin crisp up (if using skin-on thighs).
  8. Serve chicken over the savory stuffing and vegetables, garnished with fresh parsley if desired.

Notes

For extra flavor, season chicken with salt, pepper, and a little garlic powder before placing it in the crockpot.
You can swap chicken thighs for breasts or even use a whole cut-up chicken.
Add mushrooms or green beans for more veggies.
Leftovers reheat well and make great lunch bowls!
If you want crispier skin, sear chicken in a hot pan before adding to the crockpot.
