Ingredients
  

  • 1 Β½ lbs boneless skinless chicken breasts or thighs
  • 1 medium onion diced
  • 1 bell pepper red or green, diced
  • 3 cloves garlic minced
  • 1 14 oz can diced tomatoes, drained
  • 1 cup heavy cream
  • 1 Β½ cups chicken broth
  • 2 tsp Cajun seasoning adjust to taste
  • Β½ tsp paprika
  • ΒΌ tsp cayenne pepper optional for extra heat
  • 8 oz penne or rigatoni pasta
  • 1 Β½ cups shredded cheddar or Monterey Jack cheese
  • 2 tbsp olive oil or butter
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

Prep Crock Pot:
  1. Place chicken, onion, bell pepper, garlic, diced tomatoes, Cajun seasoning, paprika, cayenne, salt, and pepper into the slow cooker.
Add Liquids:
  1. Pour in chicken broth and heavy cream. Stir to combine. Cover.
Cook:
  1. Low setting: 4 hours
High setting:
  1. 2–3 hours
  2. Chicken should be fully cooked and tender.
Shred Chicken:
  1. Remove chicken, shred with two forks, then return to crock pot.
Cook Pasta:
  1. About 20–25 minutes before serving, cook pasta separately until al dente. Drain and stir into crock pot.
Add Cheese & Finish:
  1. Stir in shredded cheese until melted and creamy. Adjust seasoning with salt, pepper, or extra Cajun seasoning if desired.
Serve:
  1. Garnish with chopped parsley and serve hot.

Notes

Use chicken thighs for extra juicy, flavorful meat.
For a richer dish, add a splash of cream cheese along with the shredded cheese.
Cajun seasoning can be adjusted based on your spice tolerance.
Leftovers reheat well β€” add a splash of chicken broth when warming to maintain creaminess.
