Method
Prep Crock Pot:
- Place chicken, onion, bell pepper, garlic, diced tomatoes, Cajun seasoning, paprika, cayenne, salt, and pepper into the slow cooker.
Add Liquids:
- Pour in chicken broth and heavy cream. Stir to combine. Cover.
Cook:
- Low setting: 4 hours
High setting:
- 2β3 hours
- Chicken should be fully cooked and tender.
Shred Chicken:
- Remove chicken, shred with two forks, then return to crock pot.
Cook Pasta:
- About 20β25 minutes before serving, cook pasta separately until al dente. Drain and stir into crock pot.
Add Cheese & Finish:
- Stir in shredded cheese until melted and creamy. Adjust seasoning with salt, pepper, or extra Cajun seasoning if desired.
Serve:
- Garnish with chopped parsley and serve hot.
Notes
Use chicken thighs for extra juicy, flavorful meat.
For a richer dish, add a splash of cream cheese along with the shredded cheese.
Cajun seasoning can be adjusted based on your spice tolerance.
Leftovers reheat well β add a splash of chicken broth when warming to maintain creaminess.
