Make the Sauce:
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.
Cook the Chicken:
- Toss chicken pieces in cornstarch, season with salt and pepper. Heat oil in a skillet over medium-high heat and cook chicken until golden and cooked through, about 7β8 minutes. Remove and toss in bang bang sauce.
Assemble Bowls:
- Add a scoop of rice to each bowl, top with lettuce, carrots, cucumber, and sauced chicken. Garnish with green onions and sesame seeds.
