Ingredients
  

For the Chicken:
  • 1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
  • Β½ cup cornstarch
  • Salt & pepper to taste
  • 2 tbsp vegetable oil for pan-frying
For the Bang Bang Sauce:
  • Β½ cup mayonnaise
  • ΒΌ cup sweet chili sauce
  • 1 tbsp sriracha adjust for spice
  • 1 tbsp honey or sugar optional for sweetness
For the Bowl Base:
  • 2 cups cooked jasmine or basmati rice
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup diced cucumber or edamame
  • Chopped green onions & sesame seeds for garnish

Method
 

Make the Sauce:
  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.
Cook the Chicken:
  1. Toss chicken pieces in cornstarch, season with salt and pepper. Heat oil in a skillet over medium-high heat and cook chicken until golden and cooked through, about 7–8 minutes. Remove and toss in bang bang sauce.
Assemble Bowls:
  1. Add a scoop of rice to each bowl, top with lettuce, carrots, cucumber, and sauced chicken. Garnish with green onions and sesame seeds.
