Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs (or breasts), cut into chunks
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • For the Teriyaki Sauce:
  • 1/3 cup soy sauce or coconut aminos for gluten-free
  • 1/4 cup honey or sugar-free syrup for keto-friendly
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar or monk fruit sweetener
  • 2 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp cornstarch + 2 tsp water slurry, for thickening
  • Garnish:
  • Sesame seeds
  • Sliced green onions

Method
 

Preheat Air Fryer:
  1. Set to 380°F (190°C).
Season Chicken:
  1. Toss chicken pieces with olive oil, salt, and pepper.
Cook Chicken:
  1. Place in air fryer basket in a single layer. Cook 14–16 minutes, shaking halfway, until golden brown and cooked through (internal temp 165°F / 74°C).
Make the Sauce:
  1. While chicken cooks, whisk soy sauce, honey, rice vinegar, brown sugar, sesame oil, garlic, and ginger in a saucepan over medium heat. Simmer 2–3 minutes. Stir in cornstarch slurry and cook until thickened.
Combine:
  1. Toss cooked chicken with warm teriyaki sauce until well coated.
Serve:
  1. Garnish with sesame seeds and green onions. Serve over rice, noodles, or steamed veggies.

Notes

Shortcut:
Use store-bought teriyaki sauce if you’re short on time.
Protein Swap:
Works with shrimp, salmon, or even tofu. Adjust cook time as needed.
Crispier Chicken:
Lightly dust chicken with cornstarch before air frying for a crispier bite.
Meal Prep:
Store in fridge up to 4 days; reheat in air fryer or skillet to keep texture.
