Ingredients
  

  • 12 fresh strawberries hulled
  • 1 cup granulated sugar
  • 1/3 cup water
  • Optional: bamboo skewers
  • Optional: sesame seeds for garnish

Method
 

  1. Prep Strawberries:
  2. Wash, hull, and thoroughly dry strawberries. Thread 2 strawberries per skewer (or as desired).
  3. Make Sugar Syrup:
  4. In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Then let boil without stirring until it reaches 300°F (150°C) on a candy thermometer (hard crack stage).
  5. Coat the Strawberries:
  6. Quickly dip each strawberry skewer into the hot syrup, letting excess drip off. Place skewers on parchment paper to cool.
  7. Optional Garnish:
  8. While syrup is still sticky, sprinkle lightly with sesame seeds if desired.
  9. Cool Completely:
  10. Allow candied coating to harden completely before serving. Enjoy immediately for the best crunch.

Work Quickly: Sugar syrup hardens fast; have strawberries ready before boiling.
