Ingredients
  

  • 3 cups seedless watermelon cubed
  • 2 large ripe peaches pitted and sliced
  • 1/2 cup cucumber thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves chopped
  • Juice of 1 lime
  • 1 tbsp honey optional
  • Salt & freshly cracked black pepper to taste
Optional Add-ins:
  • 1/4 avocado cubed
  • Balsamic glaze for drizzling
  • Toasted almonds or pumpkin seeds for crunch

Method
 

  1. In a large bowl, gently toss together watermelon cubes, peach slices, cucumber, and red onion.
  2. In a small bowl or jar, whisk together lime juice, honey (if using), and a pinch of salt and pepper.
  3. Pour the dressing over the fruit mixture and toss lightly to coat.
  4. Top with feta, chopped mint, and any optional add-ins like avocado or toasted seeds.
  5. Chill for 10โ€“15 minutes before serving to let flavors mingleโ€”or serve immediately for a super fresh bite.

Notes

Use ripe but firm peaches so they hold their shape when sliced.
For a dairy-free version, skip the feta or use a plant-based alternative.
Want to make it a meal? Add grilled shrimp or chicken on top.
This salad is best eaten fresh but will hold up in the fridge (covered) for up to 24 hours.
