Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • ¾ cup milk
  • 1 tsp vanilla extract
  • 2 ripe nectarines diced
  • Optional: cinnamon or nutmeg

Method
 

  1. Preheat oven to 375°F (190°C). Line or grease a muffin tin.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon if using.
  3. In a separate bowl, mix melted butter, sugars, eggs, milk, and vanilla.
  4. Combine wet and dry ingredients until just mixed. Fold in diced nectarines gently.
  5. Spoon batter into muffin cups, filling ¾ full.
  6. Bake 18–20 minutes, or until tops are golden and a toothpick comes out clean.
  7. Cool slightly and enjoy warm or at room temperature.
