🍑 Homemade Nectarine Jam

Ingredients
  

  • 4 cups ripe nectarines peeled & chopped
  • cups granulated sugar
  • 2 tbsp lemon juice
  • 1 packet fruit pectin optional for thicker jam
  • ½ tsp vanilla extract optional

Method
 

  1. Peel and chop nectarines (you can blanch them first for easier peeling).
  2. Combine nectarines, sugar, and lemon juice in a saucepan.
  3. Cook over medium heat, stirring frequently, until fruit softens (about 10 minutes).
  4. Mash with a potato masher for a chunkier texture or blend for smooth jam.
  5. Add pectin (if using) and bring to a full rolling boil for 1–2 minutes.
  6. Simmer until thickened, about 20–30 minutes, stirring often.
  7. Pour into sterilized jars. Let cool, then refrigerate or process in a hot water bath for long-term storage.
