Ingredients
  

For the Corn Mixture:
  • 3 cups corn kernels fresh, canned, or thawed frozen
  • 1 tbsp butter
  • ¼ cup mayonnaise
  • ¼ cup crumbled cotija cheese or feta
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp lime juice
  • ½ tsp chili powder
  • Salt and pepper to taste
For the Tacos:
  • 8 small corn or flour tortillas
  • 1 avocado sliced
  • ½ cup shredded red cabbage optional, for crunch
  • Extra cotija cheese chili powder, and cilantro for topping
  • Lime wedges for serving
Optional add-ins:
  • Hot sauce or Tajín
  • Sour cream or Mexican crema
  • Diced red onion or jalapeño for heat

Method
 

Cook the Corn:
  1. Heat butter in a large skillet over medium-high heat. Add corn and sauté for 5–7 minutes until slightly charred. Remove from heat.
Make the Street Corn Mixture:
  1. Transfer cooked corn to a bowl. Stir in mayonnaise, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
Warm the Tortillas:
  1. Heat tortillas in a dry skillet or microwave until soft and pliable.
Assemble the Tacos:
  1. Spoon the corn mixture into each tortilla. Top with avocado slices, cabbage (if using), extra cheese, and a sprinkle of chili powder.
Garnish and Serve:
  1. Add a squeeze of lime and any extras you love—hot sauce, crema, or more cilantro.

Notes

Want protein? Add grilled shrimp, shredded chicken, or black beans.
No cotija? Use feta or Parmesan for a salty kick.
Make it spicy: Mix hot sauce directly into the corn mixture or sprinkle with cayenne.
