Method
Add Ingredients to Slow Cooker:
- Place corn, cream cheese, pepper jack, cheddar, sour cream, green chiles, jalapeño (if using), garlic powder, onion powder, smoked paprika, salt, and pepper into the slow cooker.
Cook:
- Cover and cook on LOW for 2 hours, stirring every 30 minutes, until cheeses are fully melted and dip is creamy.
Stir & Adjust:
- Stir well to combine. Taste and adjust seasoning or spice level as desired.
Serve:
- Switch slow cooker to WARM setting and serve directly from the crockpot with tortilla chips or crackers.
Notes
Heat Control: Skip jalapeño for mild, or add cayenne for extra kick.
Extra Creamy: Add ¼ cup milk if dip thickens too much.
Make Ahead: Prepare up to a day ahead and reheat gently in the slow cooker.
