Ingredients
  

  • 3 cups corn kernels frozen or canned, drained
  • 1 8 oz block cream cheese, cubed
  • 1 cup shredded pepper jack cheese
  • ½ cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 4 oz can diced green chiles
  • 1 small jalapeño finely diced (optional, for extra heat)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
For Serving (Optional):
  • Tortilla chips
  • Crackers or toasted baguette slices

Method
 

Add Ingredients to Slow Cooker:
  1. Place corn, cream cheese, pepper jack, cheddar, sour cream, green chiles, jalapeño (if using), garlic powder, onion powder, smoked paprika, salt, and pepper into the slow cooker.
Cook:
  1. Cover and cook on LOW for 2 hours, stirring every 30 minutes, until cheeses are fully melted and dip is creamy.
Stir & Adjust:
  1. Stir well to combine. Taste and adjust seasoning or spice level as desired.
Serve:
  1. Switch slow cooker to WARM setting and serve directly from the crockpot with tortilla chips or crackers.

Notes

Heat Control: Skip jalapeño for mild, or add cayenne for extra kick.
Extra Creamy: Add ¼ cup milk if dip thickens too much.
Make Ahead: Prepare up to a day ahead and reheat gently in the slow cooker.
Add-Ins: Bacon bits or diced red bell pepper add great flavor and texture.
Party Tip: Keep on warm and stir occasionally to prevent sticking.
