🌶️ Stuffed Pepper Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 3 bell peppers red, green, or yellow, diced
  • 2 cloves garlic minced
  • 1 cup uncooked white rice
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 8 oz can tomato sauce
  • 1 cup shredded cheddar cheese divided
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup water or beef broth
  • Fresh parsley or basil for garnish optional

Method
 

Preheat Oven:
  1. Preheat your oven to 350°F (175°C).
Cook Ground Beef and Veggies:
  1. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat. Add garlic and bell peppers, cook for 3-4 minutes.
Combine Ingredients:
  1. Stir in uncooked rice, diced tomatoes (with juice), tomato sauce, Italian seasoning, salt, pepper, and water or broth. Mix well.
Transfer to Baking Dish:
  1. Pour mixture into a greased 9x13-inch casserole dish and spread evenly.
Bake:
  1. Cover with foil and bake for 35 minutes.
Add Cheese:
  1. Remove foil, sprinkle with 1/2 cup shredded cheddar cheese, and bake uncovered for an additional 5-7 minutes, until cheese is melted and bubbly.
Serve:
  1. Garnish with fresh parsley or basil if desired. Serve warm.

Notes

Use brown rice, but increase baking time and liquid accordingly.
For a vegetarian option, substitute ground beef with cooked lentils or plant-based crumbles.
Leftovers reheat well and make a great lunch the next day.
You can add hot sauce or red pepper flakes for a spicy kick.
