Ingredients
  

For the Buffalo Chicken Filling:
  • 2 cups cooked chicken shredded
  • cup buffalo wing sauce adjust to taste
  • 4 oz cream cheese softened
  • ½ cup shredded mozzarella or cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
For the Taquitos:
  • 12 small flour or corn tortillas
  • Cooking spray or olive oil spray
For Serving (Optional):
  • Ranch or blue cheese dressing
  • Celery sticks or carrot sticks

Method
 

Preheat Oven:
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Make the Filling:
  1. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper until fully mixed.
Assemble the Taquitos:
  1. Warm tortillas slightly to make them pliable. Spoon 2–3 tablespoons of filling onto each tortilla, roll tightly, and place seam-side down on the baking sheet.
Bake:
  1. Lightly spray taquitos with cooking spray. Bake for 18–20 minutes, flipping halfway, until golden and crispy.
Serve:
  1. Remove from oven and serve hot with ranch or blue cheese dressing on the side.

Notes

Extra Crispy: Brush taquitos lightly with olive oil instead of cooking spray.
Air Fryer Option: Cook at 400°F (200°C) for 8–10 minutes, flipping once.
Make Ahead: Assemble and refrigerate up to 24 hours before baking.
Freezer Friendly: Freeze uncooked taquitos and bake straight from frozen, adding 5–7 minutes.
Heat Level: Use mild or hot buffalo sauce depending on your spice tolerance.
