🌯 Southwest Chicken Wrap Recipe

Ingredients
  

For the Chicken:
  • 2 medium boneless skinless chicken breasts (about 1 lb)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt & black pepper to taste
Wrap Fillings:
  • 4 large flour tortillas burrito-size
  • 1 cup cooked corn fresh, canned, or thawed from frozen
  • 1 cup canned black beans rinsed and drained
  • 1 cup chopped romaine lettuce or baby spinach
  • 1 tomato diced
  • 1/2 red onion finely chopped
  • 1 avocado sliced
  • 1/2 cup shredded cheddar or Mexican blend cheese
Optional Southwest Sauce:
  • 1/3 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp mayonnaise
  • 1 tsp hot sauce optional
  • 1/2 tsp garlic powder
  • 1/4 tsp chipotle powder or smoked paprika

Method
 

Prepare the Chicken:
  1. Slice chicken into thin strips. Toss with olive oil, chili powder, cumin, paprika, salt, and pepper. Cook in a skillet over medium-high heat for 6–8 minutes until browned and fully cooked.
Make the Sauce (Optional):
  1. In a small bowl, whisk together sour cream, lime juice, mayo, hot sauce, garlic powder, and chipotle powder. Adjust seasoning to taste.
Warm the Tortillas:
  1. Briefly warm tortillas in a dry skillet or microwave for easy wrapping.
Assemble the Wraps:
  1. Spread a layer of sauce (if using) on the tortilla. Add a layer of lettuce, corn, black beans, tomatoes, onions, avocado slices, shredded cheese, and cooked chicken.
Fold & Wrap:
  1. Fold in the sides and roll tightly like a burrito. Slice in half and serve immediately.

Notes

Make it lighter: Use whole wheat wraps and Greek yogurt instead of sour cream and mayo.
Make it spicy: Add jalapeños or an extra dash of hot sauce.
Meal prep friendly: Store components separately and assemble just before eating.
Great grilled: After wrapping, grill in a pan for a crisp exterior!
