🌮 Taco Pasta

Ingredients
  

  • 12 oz pasta penne, rotini, or shells
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning or 2 tbsp homemade taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro optional
  • Salt and pepper to taste
  • Optional Toppings: diced tomatoes sliced olives, avocado, extra cheese

Method
 

Cook Pasta:
  1. Boil pasta according to package instructions. Drain and set aside.
Cook Meat:
  1. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add Seasoning:
  1. Stir in taco seasoning and 1/4 cup water. Simmer 2–3 minutes until well combined.
Combine Ingredients:
  1. Lower heat and add cooked pasta, salsa, and sour cream. Stir until creamy and heated through.
Add Cheese:
  1. Stir in shredded cheddar cheese until melted and well combined.
Serve:
  1. Garnish with green onions, cilantro, and any optional toppings. Serve warm.

Notes

Make It Creamier: Add a splash of milk or cream if you like a saucier pasta.
Vegetarian Option: Replace meat with cooked black beans or lentils.
Meal Prep Friendly: Store leftovers in an airtight container in the fridge for 3–4 days. Reheat gently with a splash of water or milk.
Spice Level: Add diced jalapeños or hot sauce if you like it spicier.
